So this guide is called how to order your bubble tea, but it really can apply to any drinks at a drink shop.
There are tons of chains and tons of drinks, but I'll give you the general example of the standard thins they ask you and the Chinese terminology to navigate your sweetness and ice level.

Suggestion:
I'm a fan of 50嵐 (Wǔshí Lán), which is a popular chain in Taipei/New Taipei City.

Actions
When you arrive, look at the menu, usually posted at the counter or on the wall.
Common drinks:
Black Tea – 紅茶 (hóng chá)
Green Tea – 綠茶 (lǜ chá)
Oolong Tea – 烏龍茶 (wū lóng chá)
Milk Tea – 奶茶 (nǎi chá)
Pearl Milk Tea (Bubble Tea) – 珍珠奶茶 (zhēn zhū nǎi chá)
They'll have English and Chinese and they will do their best to speak English to you. They've got signs and laminated menus that they can give you to point at.

After that, they're gonna ask you:
甜度冰塊 tián dù bīng kuài
Sweet level and ice, which is they're way of asking how much sugar and ice do you want.
You can answer the following ways (see image below for reference):
Sweetness level
Full sugar – 全糖 (quán táng)
Less sugar – 少糖 (shǎo táng)
Half sugar – 半糖 (bàn táng)
Quarter sugar – 微糖 (wēi táng)
No sugar – 無糖 (wú táng)
Amount of Ice
Regular ice – 正常冰 (zhèng cháng bīng)
Less ice – 少冰 (shǎo bīng)
Little ice – 微冰 (wēi bīng)
No ice – 去冰 (qù bīng)
Actions
After that you pay and get your receipt, which usually will include a number they'll call to tell you your order is ready.
Then you grab your drink and enjoy it wherever you so choose!
